    Keggle Insulation - Keg Koozie vs Reflectix (pics)

    Get a roll of reflectivex, wrap it around the keggle/kettle, and throw an old towel on the lid (this is what I do and my mash temp doesn't change at all in a hr, I BIAB) or make a lid out of reflectivex. It's cheaper than the keg coozie, and works just as well, if not better.

    Stainless Immersion Chiller (2X 115' coils)

    IMHO, that would be way overkill. I have a 50 foot 3/8 inch chiller (copper) that chills 6 gal wort from boiling to pitching temps in 7-15 min depending on season and tap water temp. If I had your stainless id build an immersion chiller and a herms coil from the get-go.
