    If you're not set on putting a sample up for judging in a BJCP competition you don't have to worry. A little extra efficiency and ABV isn't a fault and it should age well. Matter of fact, if you can set some aside and see how it tastes later.

    This style of beer is typically a lager so temperature control would be good approach. 60F or below would be fine.

    If you can find the liquid Wyeast 2565 and ferment it around 65F or below, use it. Doesn't flocc or compact well unless chilled but can sub for the WLP029.
