    Take notes on every temperature, volume of liquids in and out, boil off rate and pre, post and final gravity. It will do loads for you so you can fine tune your process to your equipment.

    Yeast do what they want at this point. You got action so your good. Even when the bubbling stops the yeast are still working so either take gravity readings to make sure they are 100% done prior to transfer or you can just let the wort/beer sit on the yeast 21-28 days like some of us do.

    I have heard people having bacteria in their regulator/gas lines from back flow into it. Might be worth a check.

    Me either, mostly because i don't have an easy way to get a small sample from my carboys. I normally leave them on the yeast for 4 weeks and go to kegs or bottles without issue.

    The not so obvious - things I wish I knew...

    The first thing i learned by accident was to make sure the valve is off on your mash tun when adding your water. Equally important is to make a brew every once and a while SWMBO likes. For me its close versions of Blue Moon and Rolling Rock.

    Doing a Brody Brown Ale II right now, English version of the American Brown I made for the birth of my son. It's a balmy 22F right now so I had to come in and warm the toes while I have down time. Planning Niko #6 Bluemoon clone tomorrow to keep the wife happy.

    Maybe let it sit on the yeast longer. If you Google diacetyl, homebrew science they have a informative article about it.

    Ptfe tape is getting shredded by the threads on ball valve

    If your having leaks or issues with the tape after taking the above advice look into getting Blue Monster PTFE. It can be found at Menards and its the only tape I try to use now. Home Depot also sells a heavy duty one that is black but its the same price for half the amount.

    Oxyclean has taken off every label I've tried it with. Just a 30 minute soak in hot water and the label comes off whole with no residue.

    As resident manager your in a tough spot for sure. I'd normally say just keep doing what your doing and run the risk of liability if something happens but in your position you shouldn't ignore something because you like doing it and enforce others.

    Beverage Factory has a nice selection. I bought a triple tap through them and have been happy. The unit is only about 6 months old but has worked as expected.
