    I've got a saison going now and I usually listen to the Jaimil show for whatever style I do before the brew. He says if you get stuck short, throw a package of dry champagne yeast in to finish it off.

    I forgot to add, I used the swampcooler method where I put the carboy in a tub with water and covered it with a shirt to wick up the water in front of a fan. The room temp is a flat 75 most of the time and the carboy temp was 67-68. So I guess it dropped the temp equiv to like 10 deg cos you...

    I guess I could give the recipe...Basically from brewing classic styles. 11lb Pils .75lb Wheat .75lb Munich 1lb table sugar at 15 mins Mash at 148 for 90 mins. Hallertau 5.3% 1.75ish @ 60 and .75ish at flame-out. Yeast 3726 Farmhouse Saison taken from LHBS from some repitch lab or something...

    Recommend me some warm ferments.

    I'm looking at a 75ish fermentation temp. Would I be safe with pretty much any belgian style? Maybe yeast variety matters as much as brewing style? I was kind of thinking about going with a wit until I get a mini-fridge for fermentation. Any thoughts or links would be appreciated.

    First time I'm actually worried about a brew.

    I'm moving in like a week or two so I decided to use up what I had. Anyway, I pitched some 002 that was obviously vinegary smelling. It was stored in the vile, in my fridge for like a month. Was this a bad mistake? Should I hit up lhbs and get some recovery yeast in the morning?

    dude, get some canning jars. Fill it with cherries, then like 3/4 with some vodka or something and the rest with simple syrup. Let it marinade dark and cool for like 2 months and eat the cherries and drink the liquor.
