    If you are looking for a kit I would 100% say you should go for it and get the free kettle, I think it is worth it if you plan on brewing more than a few time a year. I use only plastic fermenters, I brew a lot and beat up my stuff, so plasic is the way to go for me.

    I would recomend purchasing a kit with everything you need included if you have trouble getting hops or malt. it will have everything included that you will need and will cost about 50-55$ for 5 gallons.

    099 will work fine on it's own with a normal yeast starter. I have had great luck with it in the past.

    That recipe looks good, I would recomend WB-06 if it's a wheat beer. I have had good luck with it.

    poor sanitation is the best way to ruin your beer. I would recomend fermenting for atleast 2 weeks, even after fermentation the yeast can clean up some off flavors left in the beer, no rush to bottle. make sure the priming sugar is boiled well before adding. never be afraid to buy fresh yeast...

    Late addition of LME or DME

    If you are making a pale style (pilsner, pale ale, cream ect) it will darken much less with late addions. I find DME is much easier for adding late in the boil.

    if your fermenting for less than 4 weeks I would say it's completely pointless and not worth risking contamination. I don't think you will notice any difference.

    for the second one I would say add more water, but 4-5 points is just fine. that being said even at 10 points off it will ferment just fine, so don't stress too much.

    3 weeks to carbonate, that being said I have noticed most of my beers benifit from atleast a month of aging in the bottle.

    Blow-off tube

    I have had the foam actually fill the container and over flow, luckly into a large bowl I left it sitting in. I have done this many time with sanitizer solution and never had any off flavors when completed. hope that will lower your anxiety with using the blowoff.

    I would recomend a kit atleast the first time to become familiar with a typical recipe but its up to you, if there is a home brew store near you than they will have everything you would need to make your own.

The most I could get away with when I used a smaller kettle was about 8lbs of LME and that was really pushing it.
