    I would recomend bottle aging for as long as you can, I always thought my dark beers felt a little harsh till it aged atleast a few months and then would taste fantastic.

    I guess that was what I was asking sorry for the confusion, I don't want to ruin the whole batch so I guess I will just suck it up and open all the bottles and just add some carb drops.

    Sanitation.

    I dont use a spray that often, but I will sometimes for some of my brewing tools or maybe a muslin bag im using for dry hopping. It is nice to have but you don't NEED it so I wouldn't stress over it.

    no yes and no. It will only be like that for the first few days. It really depends of your yeast and fermentation. Not all batches will do that but some will, I have noticed when I use wheat beer yeast I always need a blow off.

    just a light DME would work with just about anything but for a Kolsch I would recomend a pilsner DME.

    To avoid the cidery flavor all together you can sub DME for corn sugar pound for pound. It will give you more body and better flavor.

    that sounds normal to me, the yeast will floc to the bottom after you shake it. I wouldn't stress over it.

    I always age my dark beer 3-5 months before opening. I would recomend being patient before drinking it, mine always taste better after sitting around for a while.

    Little Carbonation

    One thing I have done in the past that has worked with low carbonation is after about 1 and 1/2-2 weeks flip the bottles upside down for 3 days then turn them right side up. I guess the idea is to wake up and agitate the yeast. Either way it has always worked for me.

    sounds good certainly not too much it will give you a lot of flavor and won't end up as bitter as you think. you will get more flavor with out a bag but it will be much harder to filter out after.
