    I thought when using extract it was important to boil at least until the Hot Break? this would settle out proteins

    No action starter

    The way you wrote your message it sounds like you boiled after adding the yeast. if this is true the yeast are dead and something else is growing. There should be little noticable kraesen with stir plate because the action removes the co2 the yeast would cling to.

    you should also consider pitching 2 packs of the yeast or making a starter, aerate well before pitching, and as stated keep the temp. down.
