    Just a quick follow up. As luck should have it I had exactly 2 lb 10 oz of DME, I pulled a couple gallons of wort and boiled with the wort for 15 min, cooled and added back to the rest of the wort and my gravity was exactly 1.064.     I regards to the constant hops/spice additions, this is exactly waft dogfish head does with 90 minute IPA. They made a machine to shake it in constantly. Just hops though, not sure about the spices.

    Are there any concerns on whether or not the Fermcap is sanitary? I put a few drops in my starter boil last night, but I didn't know if there was a chance for infection if you add it during fermentation.
