    I'm by NO means an expert, but AFAIK by that point the most "volatile" stages of fermentation will be complete so you shouldn't have any issues with the extra airspace... But as I said, I'm not too sure, you might want to wait for someone more experienced to reply!

    Thanks everyone! After thinking about it, I'm going with Brewsday's idea of washing and repitching. Until I have enough mason jars and time to work out a proper yeast washing regime, this seems like a good halfway house. I'll let you all know how it goes!

    That was my first thought too, but I started with 6.8l of strike water, which I assumed would be enough? Do you think maybe I just left too much water in the grain bag? I didn't want to squeeze it too much to avoid extracting tannin, but is that a misnomer?

    Thanks, and would that be enough space for big beers? Nothing crazy, but I like the idea of brewing an Imperial Stout one of these days. Also, would you guys recommend batch or fly sparging if I were to use that sort of container?
