    Good catch - I meant 211.3 F. The boiling point for wort and for water is not that different, from what I have read. Yes, I use the wattage control. I was surprised to see that it goes well beyond 1500 watts for the 120 V machine. I think it went up to about 1700 watts (on a dedicated circuit).
