Brew your own - Social condemnation?

I was homebrewing before I joined the Army. When I was doing the ridiculous amount of paperwork at the recruiter's office, I came to the question about how much you drink and the recruiter told me to just put "none" so I didn't get a psych evaluation. I didn't tell him that the Army would...

Fermenting lagers with ale yeast at true ale temps??

Check out Brewing TV Episode 53. They do a whole show on lager workarounds. There might be something useful for you in there.

    ruination's 10th anniversery

They're distributing to GA, but I doubt it will make it all the way down here to Columbus. It'll probably stay mostly in Atlanta...freekin' Columbus...

    East coast beer trip!!!

Athens is a good 1.5 hours east of Atlanta, though. Might be too much out of the way if they're just going through Atl. I'll be in Athens next summer for a wedding, though, so I'm glad you shared this. I'll definitely have to check it out.

    A "crappy" situation

John Palmer should add this to the 4th edition of "How to Brew" under the "Why Boiling is Important" section.

    Preferred Carbonation Level

I just prefer to carbonate to style. I don't want a spritzy English ale, and I don't like a flat Belgian. Most beers have a small range of carbonation levels where they taste the best.

    using oak cubes

I would listen to these two Brewing Network podcasts if you want some good general info about wood-aged beer: http://thebrewingnetwork.com/shows/The-Jamil-Show/Wood-Aged-Beer-The-Jamil-Show-07-30-07 http://thebrewingnetwork.com/shows/Brew-Strong/Brew-Strong-09-15-08-Wood-Aging

    Ingredients...

I was wondering this, too. I mostly use Brewmaster's Warehouse, but I haven't brewed a beer yet where I wasn't able to get what I needed from them. When it comes to equipment, on the other hand, I sometimes find myself ordering from multiple sites to get exactly what I want.

White Labs vial past "Best By" date...

I'm planning to brew a Belgian Pale Ale this weekend (OG 1.052), and the vial of WLP575 that was sent to me with my order is past it's "best by" date by about 10 days. I called the shop that sent it to me, and it was the last one they had. I was assured that the yeast had been kept...

    Brewmasters Warehouse Low Efficiency?

I've never gotten less than 75% with grains from them, and all but one of my AG batches have been ordered from there. They seem to get a bit backed up on shipping sometimes, but I've always received a good product from them.

2 Batches, Same Equipment, Different Efficiency

Did you sparge at the same rate on both batches? Faster sparges will result in lower efficiency. I know you said that both batches were processed the same, but I have played around with sparge rates and it can dramatically affect efficiency.

Questions on my plans for a scottish ale

In Brewing Classic Styles, he recommends using WLP001; you could try that one out as well.

    Advantage to SS hardware?

I'm looking to add a valve and side pick-up tube to my boil kettle and was wondering: Is there a big advantage to getting stainless steel stuff over brass or copper? In the interest of budget, I was considering the brass valve and copper pick-up tube, but if there is a real reason to go with...

    Calculating water volumes

I plan to refine this process, but, on my first AG batch, I calculated how much mash water I needed, how much I would lose to grain absorption, how much I would lost to dead space and how much I would need in my pot pre-boil. Whatever the difference was between what I would gain/lose in the...

    First ag batch, help.

What kind of style were you shooting for? What was your target mash temp? The 147.5 will still make beer for sure, but it will be different than what you would have gotten if you hit the target. My first (and currently only) AG batch I overshot my temp by about 6 degrees. I didn't want to...

    Need some advice on water...

So, I just moved to a new town and the water here tastes terrible. I'm pretty sure it's really high in chlorine and I don't think it will produce a very good beer. Can I used bottled drinking water and achieve a satisfactory result? I'm brewing a basic APA this time using extract and some...

West Jefferson, NC - Craft Beer ?

I don't doubt that. NC's Appalachia regions are some of my favorite parts of the country.

West Jefferson, NC - Craft Beer ?

I checked it out on Google Maps, and it looks like it's kinda isolated. I'm not sure that you'll find much there unless you drive a bit. I've never been there, though, so I could be wrong.

What is the big deal about Belgian Beers?

While I certainly haven't tried every "official" style out there, I do find that if a beer is well-made, I enjoy it.
