Cigar City Jai Alai Clone

Do you have alpha acid contents of these? What is the mash schedule? Batch size....there's a lot missing here.

Is it safe to drink my beer before priming/bottling?

Don't do it, quite poisonous. One time I knew a guy who knew a guy who drank some beer before it was primed and bottled, and he died. No really it's fine, drink away.

    How effective is cold crashing?

Cold crashing near freezing greatly improves the clarity of beer in relation to getting yeast etc to fall out. It will not help at all with chill haze. If you can't get below 45 and doing that would risk damaging equipment I would say skip the step. I typically run my fermentation chamber...

    Belma hop

For my 2012 crop I used 9.8% as that was printed on my package, a default beta of 2%. I made a DIPA SMASH with Belma. It wasn't a great beer but I've had many worse (think anything BMC).

    The best kind of hops?

You should probably go to your LHBS and sample a few. You know just pop them in your mouth and see how they taste. :D

    Falconer's Flight dilemma

Do what he said and stop being dumb. I brew a DIPA w/ FF, Citra and Amarillo - 13oz of pellet hops in a 10g batch. The nylon bag hold it all. They're great hops by the way, but nothing you can't achieve with all of your North American 'C' hops.

Well, Im done with glass carboys!

Which Christmas Story quote to go with...."YOU USED UP ALL THE GLUE!!!" or "Somewhere in the distance I could hear the sound of taps playing softly."

    My efficiency sucks

I would say your issue is 3 fold. First off I would consider a redesign w/ 2 gallons of dead space. Second would be your grain crush. I run my grain through at .032" then do a second pass and tighten it up just a bit. I run about a 92% mash efficiency and 82% brewhouse efficiency. Third...

    MYPIN TA4 'LLLL' error

So turns out that I just had 2 wires crossed. After doing a continuity check and swapping 2 wires it worked like a charm. So far I'm happy with this PID but boy is it difficult to really find much in terms of useful easy to read instructions.

    MYPIN TA4 'LLLL' error

Thanks Dave, I'll check again on the wiring when I get home. I did like Kal and wired them to XLR connections so it is quite possible that I got one backward. I do have the jumper installed.

    MYPIN TA4 'LLLL' error

Has anyone come across this error? [/IMG] I am using a 3 wire RTD thermocouple and have the PID set to Pt. The other PID is set to the same settings and it is reading just fine. Also as it has been well documented all over the internet the instructions that come with this SUCK...

    Need help diagnosing wiring

I have 2 issues I am trying to solve for. First off...I am using an STC-1000 PID controller wired into a 25A SSR relay I have full 120V power coming in but I have nothing coming out of the SSR, the red LED is illuminated so I know that the PID is telling it to close. I currently have it...

Can I use kegs and CO2 to eliminate oxygen and clarify my beer?

I typically don't use hop bags because of the conical. I just dump trub etc before transferring to kegs. Cold crashing prior to the filtering will help a ton, no clogs.

Can I use kegs and CO2 to eliminate oxygen and clarify my beer?

I ferment in a conical and my kegging process is to clean, sanitize, then fill w/ CO2 and release 3-4x this will purge close to 90% of the oxygen from the keg and leave a blanket of CO2 on top. Then hook up 3/8" hose from my fermenter to the out post on my keg. From there I just keep the...

Tips for the Homebrewer that wants to get in the brewing industry

Living in Kansas can't help too much. I've worked in breweries, it isn't glamorous. Small breweries don't have the money to pay much. Head brewers typically max out around 50-60K till you move into large scale production. If you get into large scale (even Sam/Lagunitas/Boulvard etc are...
