    Fermentation was off to a start within 8 hours of pitching the yeast without a starter. Below is the current temperature profile. 10 deg delta in chamber vs beer! This yeast has always been very exothermic for me.

    I have been interested to try the same thing. Maybe use midnight wheat for color. I also thought to cold steep carafa 3 or 2 to avoid extra astringency and roast flavors. I just made 3 NEIPAs over summer and needed a break before trying this. Curious what you have planned.

    Cherry Ordinary Bitter (Personal recipe) Wish the Cherry flavor was more forward personally, but 1318 pairs decently with cherries. Recommend others trying it out.

    Looking great! I personally remove my false bottom before the boil, and place the immersion chiller directly on the element. No issues for ~1.5 years now. Though my chiller is 25ft copper coil, so take that for what its worth.

    I already had extra plugs (connectors) so no. For the the probe I bought the PT100-L601/2NPT from before and used that. I had to screw it into the top of the tee for this to work.

    Correct, it's a Haier beverage cooler. I am using an Arduino Brewpi setup to control the wort/beer temperature. It's been running strong for nearly 3 years without issues.

    Working on my house bitter recipe. It's almost where I want it, just changed the mash temperature from 152 to 154 and upped the ABV from 3.8 to almost 4.1. hit my numbers dead on! 3.5 hours later (9:30am) and it's already settling post whirlpool.

    Active fermentation kicked off about 8 hours after pitching the yeast. Added a blow off tube just in case. Schedule for fermentation: First day at 65F Then slowly rise to 70F over the next 7 days.

    Finally was able to do my inaugural brew day on my new controller. I had some left over 1318 from a NEIPA and decided to try my own take on Dawson's Boat Bitter from Chop & Brew. Ended with 6 gallons in the fermenter, hitting my OG dead on.

    First attempt at a hefewiezen

    +1 for a Munich addition. I used to do a Hefeweizen with Munich to add a little color. This was when I had to use the lbhs mill without a gap setting, but I would target 5% ABV, so adjust as required. I always liked how this on turned out.

    When the freezer top is closed be sure there isn't an overhang that could interfere with the tap handles. Also leave enough material to not make the collar weak on the top side.

    How to add creaminess to the beer?

    I hear a water chemistry option would be to have a >1 chloride/sulfate ratio. That is what they do with NEIPAs to improve the creamy mouth feel and accentuate the oats. I recently learned this and would like to try it also on a Hefeweizen.
