    Priming sugar options?

    I honestly couldn't tell maple syrup had been used to prime the beer I tried. As RPh Guy said, the amount is too small to really add some flavour, although molasses in an English Ale can add a bit of flavour.

    Super low efficiency on my all grain system!!??

    I have noticed this too, I worked hard to up my efficiency, but doing so seemed to make my beer lose some of the dimension of flavour. I now keep my efficiency at 75%, as this seems to me to be the best balance of efficiency and taste.

    Though it may seem counter-intuitive, over tightening on a bulkhead can cause it to leak. Try backing things off a bit and see if that helps.

    Solitary brewer ?

    Solo brewer here too. I like to get started about 6am Sunday mornings ( the only time I ever voluntarily get up early ), I enjoy the peace and quiet and the only other person up at that time is my dog. On a quick brew day I can be done by 10am

    Another vote for direct vent. Not only will it help deal with the moisture, but it will also help to dump some of the heat your brewery produces as well.

    I Store mine in wooden cases that I made. I got a lot of free wood from work so I used it to make some cases. This is them before gluing up and having the bottom in or the hand holes cut.

    What can I ferment at uncontrolled room temp?

    I have had good luck with English bitters fermented in the 68-70 degree range, in warmer months a saison would work too.

    Depending on the gravity of your beer and the fermentation temp, it could be that your beer is almost done. A hydrometer reading will let you know what is going on.
