    Where to age a Barley Wine?

    Thanks Ouroboros thats a helpful post. Ill make sure to add yeast at bottling. Should I do like half a teaspoon per bottle? or like 2 tablespoons to the batch and mix it up, or would that just kick up the crap on the bottom of the secondary.

    Thanks for the tip. By friends i mean my girlfriend, her friend, and her friend's boyfriend. The girls will be drinking the apple wine which is respectable enough to share. It'll probably come down to just me drinking the beer so i may just bottle half of it a day after fermentation to bring...

    heh about the software. Yes the extra hops were only in for 10 min. Does it really take weeks to carbonate? It seems like 5 days to ferment all that stuff, then weeks to ferment just a pinch of sugar?

    Oh and I love how my local brew shop said theres no way it will reach 100 IBU (which is what i was shooting for, I love that bitterness) yet the calculator I used, and you guys think it will. Dunno, must not be a very exact science?

    Well I guess we'll just have to see how it tastes then. I have a feeling if the fermentation goes anything like the apple wine does then it will be ready for vegas. :mug: Oh well, it might be just shy of 3gal, you gotta think the DME takes up some volume too ya know.

    Im using WYEAST 1084 Irish Ale yeast. Im brewing only a 2 gallon batch of beer so it doesnt give me a lot of room to make the recommended starter wort. Cant I just pour half of this activated yeast into my 2 gallons of wort, and keep it at 70* ? Thanks, Dan

    As the title states, I want to grow at least enough Olympia or Cascade hops in order to achieve 100 IBU from a 5 gal brew. Can this be done in one season's planting? If so when do I plant and where do I obtain the seeds? Thanks, Dan

    Final SG is .993 believe it or not. Started with a 1.078. Racked it and am waiting for it to settle out. Set it outside for this, probably an average of 45 degrees, that aint too cold right?

    Tested my Friend's batch made at the same time and he is at .999 SG, he pitched 15g of the Cotes de Blanc. Racked both batches and they had equal sediment build up, roughly 3/16in. Tried and confirmed its a beast of a brew :rockin::rockin:

    So I started this batch last Friday, it is now Thursday. Did another SG test today and its at 1.005. The bloopin has slowed down considerably. Taste is great :mug::tank::fro:

    Hmm, I may be more tolerant of the taste heh, I know I cant wait 6 months, not on the first batch at least. So Apfelwien it is. Did an SG test today and it is at 1.014, down from 1.078 after only 4.5 full days of fermentation. Does fermentation slow down towards the end?

    So Ive had the itch and the kit so me and my buddy went ahead and pulled the trigger. Right now its in its 5th day of fermentation. Let me know if you guys think there is anything easy to improve upon. Next batch will not use any water and will be from 5gals of the juice. The initial SG reading...
