    Apprehensive, big brew

    My biggest fear is a runaway fermentation. The foam has nearly taken all the headspace and being early in the fermentation I still fear it is still ramping up. This is also the first time I fermented in a clear vessel so I've actually "seen" it before.

    Brewing with carbonated water..

    I saw somewhere that mineral water is good for the yeast, I've been throwing in a liter on sparkling mineral water in each batch. Don't know if it hurts or helps, or does nothing, Still have not fully conditioned my first bottled batch.

    Patience sucks

    Yes, added the 5 oz of priming sugar before bottling. If I don't get carbonation in the next 3 weeks I'll just drink it flat. It is tasty but carbonation would make it much better.

    Looks like the nut brown ale I had to put into secondary (there was an equipment reason). I inadvertently added some air and trub. Hoping a week will settle things.

    I finally found a "Not So Local Home Brew Store", NSLHBS. I am elated, no more waiting on mail order! Picked up a 6.5 gal fermenting bucket, and a few other toys that had me drooling, like an auto-siphon... Brewing my second brew and first wheat tomorrow. :ban:
