    As far as I understood your fermentation buckets are on the floor. If they get inside of your buckets there is a possibility of infection. I think you can use a swamp cooler filled with water so the ants don't reach your buckets (I hope it helps).

    You could if you wanted to, but as you might have read before there are more risks involved and there is not much change in the final product. I would advice you not to, unless as rodwha said, you plan to introduce some vanilla, or coffee flavours.

    Well, if you have some spare bottles that could be a nice option, to give them away, I mean. Just warn them that it is not like their average commercial beer. Who knows, they could even pick up the hobby of making their own beer.

    I haven't tried a Heffeweizen with E. K. Goldings, that I can recall, but you could give it a go. Since East Kent Goldings are from England, it would also be a nice idea to make a Bitter with an English yeast strain, or you could even make a stout, I suppose.
