    Thinking of a cranberry maibock

If it were me, I'd be careful with the spices and especially go easy on stuff like allspice and cinnamon, which can be quite strong, but that's just me. I suppose you could add spice later if you needed it but you can't take it out! Looks like a very interesting recipe. Let us know how it goes.

    San Diego!

Hello and welcome. You'll probably be spending a lot of time in the DIY section then!

    First time saison

I'm no expert but it seems like both your gravities and IBU's will be a bit on the high end for the style. Pacific jade is an interesting choice, did you consider splitting that 1/2 oz. up between the beginning and end of the boil too? Just a thought. Good luck!

Best wheat malt for a witbier?

I was looking into this as well and came across this. Based on that information I would assume that adding flour is unnecessary when you're already getting plenty of haze from your grist, though I doubt it would hurt.

I added heavy cream to my wort!

    Promises, promises.

Show off your 2012 Hops garden!

Ah, I was wondering if that was the case (help with pests). Nice work. I decided to plant some nasturtiums in my vegetable garden this spring for similar reasons (they're supposed to help keep aphids off tomatoes and others). A bonus is the flowers are edible. Fun! Time to brew...

The Online Homebrew Supplier Comparison Thread

Thanks for putting this together. So far I've only used my LHBS, but comparison shopping at so many different sites can be a pain. As a general rule, I think my decisions about buying online will come down to proximity to my location, shipping speed/cost, and quality/selection of ingredients...

    Thoughts?

The last brown ale I brewed had a pretty quick turnaround time too. I found that the beer actually tasted better the fresher it was, it did not improve with age. I would follow their directions and take gravity readings toward the end to be sure.

    Extract Brewer? Make Bagels

Here's the recipe from somebody's blog with nice pictures and stuff in case you want to try it out. The only difference in my recipe was I added vital wheat gluten to boost the gluten content of my AP flour since the recipe calls for high-gluten flour. Also don't try to mix the dough by hand...

    Harvesting bell's yeast. primero

Thanks Pablo! Great. Just noticed your signature. Ommegawd Hellepin sounds awesome. What's that all about? I'm a huge Ommegang fan so that caught my eye.

    Harvesting bell's yeast. primero

Subscribed. I'm not ready to harvest yet but plan to do this in the future. Does anyone know if there's some kind of wiki or just a good general reference on yeast harvesting? Just from reading around a bit I think I have a good idea what goes into it, but it would be good to have a...

    Extract Brewer? Make Bagels

Recently noticed a recipe from a cookbook for bagels that calls for one Tablespoon of "barley malt syrup" and mentioned that it's a hard ingredient to find. Not fer folks like us! So before I dumped all my extract in the brew kettle this weekend, I saved the extra tablespoon. (It occurred...

    Using a secondary to actually...secondary??

Does anyone have experience with using different yeasts and or sugars for multiple stages of fermentation before bottle conditioning? What styles of beer could this process be appropriate for? Curious to hear about successes or even failures in this area.

Worst Commercial Beer You've Ever Had?

One time somebody served me some type of "cerveza" from Aldi or something. It either had tequila or bacteria-infested Mexican water in it . Made Corona seem like Grand Cru.
