    Cider with WB-06 yeast

Haven't tried a batch with sugar yet. Had 80lbs of honey here for mead making and decided I could spare 2lb for cider. Since it didn't go completely dry, there should still be some residual honey flavor there, like that apple flavor, it should redevelop more as it ages. I started with the...

    Cider with WB-06 yeast

Just bottle a 5-gal batch 5 gal Musselmans AJ 2lb honey 5tsp yeast nutrient and WB-06 yeast. OG-1.062 FG-1.000 1 week in primary and 2 in secondary. Dropped out crystal clear. Still had great apple smell, and didn't taste the bitterness reported about the WB-06 yeast. Maybe the honey...

    First all-grain in the primary

Probably 1" of snow here in Des Moines. Luckily, gone quicker than it came. Checked the brew this morning. Water bath is at 62 degrees. And it's kicking one bubble/second through the blowoff.

    First all-grain in the primary

Made the jump this morning on my first all-grain (boiling in the snow no less). Picked Yooper's Fizzy Yellow Beer for my first. Using the cheap/easy 10gal rubbermaid MLT I think I hit all my temps. My floating thermo apparently went stupid, so triple checked everything with my lab...

    1st mead attempt

I would do a Cyser. The yeast will get a little more nutrient from the apple juice. 5-gallon apple juice (fresh pressed if available, make sure no preservatives) 12-15 lbs honey 16oz raisins, optional (split the raisins before adding to primary) With the lack of nutrient, even your...

    Cork 12oz. beer bottles?

My local grocery store has 6-pack Corona in 8oz bottles. I've been thinking of picking some up for the bottles (I can suffer through the Corona). And I've seen 8-pack Hieneken in 8oz bottles recently.

    Honey for Mead...

The Honey locator will give you good resources locally. http://www.honeylocator.com/ You'll find the larger the quantity, the better the pricing. I just picked up 5-12lb jugs for $2.50/lb. Beats the $4-$6/lb at the store for smaller bottles. Farmer's markets are a trap that a lot of...

    New apple cider at Walmart

The orchards around me are producing cider now. $8.50/gallon. And so far all have contained potassium sorbate. I'll stick with the mass-market juice at that price.

    Help with Cherry beer

I think a gallon of juice will give you an overly strong cherry flavor, hopefully someone else can give a better viewpoint. I've got a Cherry-Vanilla stout bottle conditioning now. Started with the Midwest Nightcap Cherry Stout kit. Racked to secondary onto 2lbs sweet and 2lbs sour cherrys...

looking for help. on small recipe

Give Joes Ancient Orange Mead a try https://www.homebrewtalk.com/f80/joes-ancient-orange-mead-49106/ Many people have had great success with the recipe and have enjoyed it immensely. Yes, honey is getting expensive. The larger the quantities you can find it in, the cheaper per # it can...

Will my brewing come to a screeching halt if I become a dad?

My wife knows there are far worse (and much more costly) hobbies I can get into. And everyone likes the results. No kids yet. 1st one due in January, and the wife is expecting some good hard cider to drink after the baby is born.

    Using champagne stoppers and wires.

You'll want to rebottle all that you can. The carbonation is there, the pressure is there. Chilling will slow it down, but the glass is already under stress. Even chilled, have a solid grip on your corkscrew. Once you get the cork started, the pressure will probably push it the rest of the...

    Cyser

You'll find several cyser recipes in the Mead recipes section or through an internet search. I've got a cinnimon-apple cyser working right now. I can't find my original recipe, but I believe it close to this (may technically be a metheglin from the cinnimon): O.G.- 1.11 F.G.- 1.00 3...

    Desperate For Beer Cases

28 bottles in each of my file crates. A precut 11x14 piece of thin plexiglass is enough for a bottom reinforcement. No longnecks in them though. They are too short for longnecks.

    Using champagne stoppers and wires.

Regular wine bottles aren't designed to hold pressure like that. If you don't pop the corks, you will create a case of glass grenades.

    Epoxy bartop buffing/scratch remover?

Go out and get some micro mesh sanding pads. Rockler - Search Results for 'micro mesh' Wet sand using water. They are used to polish out scratches in acrylic for visible clarity. I use them polish epoxy and cyanoacrylic finishes on some woodworking projects.

    Campden isn't enough is it....

Thanks for the info Yooper. I'll give things a try. On another note, based on your photo's, I've got an igloo cube I'm getting converted over for a fermentation cooler. I'm hoping to get into some lagering with it.
