    I think carbonate/bicarbonate does not have much buffering capacity at pH 4.5 or less, but am not sure. I think the prevalent species at that point is carbon dioxide. Not sure about other buffers, but the only other I can think of is phosphate, and being that drinking water does not contain...

    Avangard Maltz

    I have made good beer with their Pilsener, Vienna, Munich Light, and Pale Ale malts. I have been satisfied with it and have gone through at least two sacks of each. Note that their Pale Ale malt is a bit maltier/more biscuity than an American Pale Ale malt.

    I think my problem is that this assertion and the earlier one about normal vs. high-gravity mashing have no real reasoning behind them. A batch with more grain obviously has a deeper grain bed, but the reasons for decreased efficiency are related to the amount of water used, not the grain...

    I usually get a 10% or so hit if I do a no sparge process. Mash, then mashout, do a single runoff. That is where I lose efficiency.
