    That’s possible. My temp reading is me pulling a sample and putting my thermometer in it, actual internal temp during vigorous fermentation may be higher. But I’ve read that kviek likes it warm like even into low 100’s. I believe on the pack it says temp range of 75-95 I think.

    I’ve read not to mess with gluco cuz it just ferments all the way down. I have alpha enzyme in hand and it’s worked for me in the past on a big stout that stalled. If I can get it to drop 10pts I’ll be happy.

    The OG was 1.074. I added a full pack of voss kviek and it did what it was gonna do for 3 days then dropped and stopped. Fg reading taken day 5 was 1.028. And I fermented it in the 90’s like kviek likes.

    It’s alpha amylase enzyme I added not gluco like beano. And that’s why I ask because I wondered if the yeast or bubbles would make the hydrometer more buoyant throwing off the true reading.

    See that’s worse than I thought. And again I’m just baffled as to why this would happen in the first place. Maybe it was just a bad batch Of yeast. I did add some amylase enzyme and a pack of 05 and it’s kicked off again

    Kviek should go past that. That’s 77% attenuation which is in the 75-85% attenuation possibility but man that seems high. I added some amylase and a pack of 05 to get it moving.

    So I pulled the fermenter from the keezer at 60. Let it warm to 63 and added my 3.5oz dry hops and they dropped straight to the bottom. I swirled the carboy and then u could see particulate back in suspension but nothing floating on top. I then purged the fermenter with co2 from my keezer tank...

    so I use an aeration wand with pure 02 to aerate but I don’t use yeast nutrient I stopped years ago cuz it didnt really seem to be doing anything but back then I was always making starters for yeast like wlp001, 1318 etc for neipas So I never worried because they always hit their projected fg.

And last time I used hornidal on a beer same size as yours I tried the underpitching method and used 2tbsp into 6 gal and it stalled out at 1.030 So I vowed never do that again. And I did same as I always do pitched at 90 and heated it up, aerated 60 sec, mashed 90...
