Is there a way to determine OG after topping with H20?

I brewed a Stout on Sunday and forgot to recalculate my boil off as I was using a propane burner rather than my stove (1 gallon an hour vs. 0.5 G). As a result I ended up with 2.25 gallons rather than the 2.75 gallons I was shooting for. My OG was 1.045. In a moment of stupidity I guess, I ended...

    Difference in steeping and mashing?

For one gallon batches, just do BIAB. Paint strainer bag, pre-heat your oven to the lowest setting (mine is 170F), add grains to the bag, stir good and throw in the oven for an hour. Some stir and retake temps every 15 minutes or 20 minutes or whatever, but you will lose some heat. This is the...

    Yeast Washing Illustrated

Question on pitching. Say I do this and get 4 pint sized jars of washed yeast from a 5 gallon batch. My next batch is going to be a 2.5 gallon batch of beer with an OG of 1.048. If I don't want to make a yeast starter, would one jar be enough? OR should I pitch two jars of the yeast slurry?

A tale of first two BIABs. What do you use for bags?

Another vote for Wilser. I've got two of them. One for my 5 gallon batches and a smaller one for experimental batches.

Fermentation with too small of a headspace?

Skip the secondary. Thing of the past that the majority of people skip nowadays. More chance things will go wrong, no real benefits.

Fermentation with too small of a headspace?

I'm assuming you are brewing a 5 gallon batch? If I were you, I'd split the batch in half into the 2 carboys in order to avoid a massive blowoff and a mess all over the place. 2.5 gallons in one and 2.5 gallons in the other. And depending on what you are brewing, you could treat each carboy as a...

Psst... Buy a choc stout get a Le Petite' Orange for a 1.00

I've been brewing about 4.5 years now, and if memory severs me correctly, Northern brewer offers this same deal at this time every year. Just in time to get it brewed for Valentine's Day. I guess its supposed to be romantic beers? IDK and I could be wrong.

    Kettle size

To what Wilser said I'd add: Indoor summer stovetop brewing when temperatures top 100+ for people living in Texas and other hot areas The 5 gallon pot I got early on in my days doing extract and partial extract has worked for me doing 2.5 and some 3 gallon batches.

    Sediment and Bottling

For the most part, secondary is not needed and most people will tell you not to unless you are adding fruit or other things. I'd worry about oxidation if you are transferring to your boil kettle and then back into you secondary/bottling bucket. Personally, I'd just go grab another bottling bucket.

How much should I expect to invest?

As you've probably already noticed, you can spend as little or as much as you want in this hobby. Let me make a suggestion. Why not try one of the Brooklyn Brew Shop Kits? You can hop right into all grain batches for $40 shipped from Amazon. Refills are about $15, but you can take any 5 gallon...

Can I add hops to only half of my split boil?

Just eyeball it and get it as close as you can. Or take up LarMoeCur on his offer. Two guys from Corpus? I grew up there. Someday I hope to move back.

    What's on your Christmas list?

Two 3 gallon carboys and an oxygenation kit and I already went out and bought the two carboys with the money my parents gave me for Christmas (they decided this year that they weren't going shopping for us and just gave us all cash)
