The timeline seems a little tight. I'm not entirely sure if it will ferment dry in 1-2 months, seems pretty quick. I am currently testing something I heard from a commercial meadry, about aerating and providing more nutrients at 24,48,72 hr marks. It certainly seems like my fermentation is...
"Ruin the mead" is exactly what I didn't want to hear but thought was the case... Oh well, best just dump it out and move on!

I made a pumpkin pie mead back at the start of October, I've racked it once and went to rack it today again but there was this weird white scum, like a skin, sitting on top. Any ideas to what it is? Should I be worried??

I would taste it first. I added 2 more stocks to my batch for 1 week and then removed them, tasted prefect to me. Just remember that the flavours will dull/mellow with some age.

There is a newer brewery that just opened up by where I live, it's called MacLean's Ale. I understand it is available at most lcbo's, but is certainly a craft brew worth hunting down. I enjoy their farmhouse blonde but have yet to try their pale ale.
As well in my area is the Neustadt brewery...

I made a maple mead a while back, really good stuff. I used 1kg of honey and 1 1/2 cups of maple syrup (amber, a bit dark with loads of flavour), and 1 tsp of maple sugar. It ended up being not too sweet but a great maple flavour.
