I used 2 sachets of M54 the og was 1.068 and after 4 days its 1.018 so im guessing its nearly done fermenting as been sitting around 66f since the fermenting slowed after the first day so i bumped it up a bit to 71f with my heatmat and im thinking it could cold crash it pretty soon and let it...

California lager yeast fermenting too high

I am brewing 2 lagers that are fermenting in my chest freezer and i have no cold space for more batches. I decided to brew a hybrid california common, using california lager yeast. My apartment is usully around 60f so i assumed i could ferment in ambient. I used 2 dried sachets and pitched at...

    diacetyl rest and final gravity

I was thinking that because of the ratio perhaps the temp is off but i was hoping it would be near enough and more accurate then air temp. As for stc i purchased one but never used it thinking it was a lot of hassle and easier to spend the extra on an inkbird.. would u reccomend them over an...

    diacetyl rest and final gravity

Ive been using tap water and my ph was around 7.8 so I got a rough water report and the result on brun water was 2.8ml of lactic acid. I checked my mash ph the first time i did this and it was 5.5 so i was assuming this would be ok for the ph problem. Im mashing BIAB for 90 minutes at around...

    diacetyl rest and final gravity

I have 3 lagers on the go, the first I fermented for 17 days at 53f and it measured 1.024 from an expexted 1.016, starting at 1.052og. I checked afer 20 days and possibly a fraction off a change and then raised the temperature to 61 for diacetyl rest for 2 days further and no change in og so I...

    Water and brewing

    Cool so just to be sure!! Carbonate =1 mg/l Calcium = 23.8 mg/l Magnesium = 6.2 mg/l Phosphorus = 1/2 mg/l Iron = 1mg/l As the iron is 12ng/l im assuming its a much lower value

    Water and brewing

Some of the quantities of this report are based on averages for example if my sulphite was between 26 to 28, then i stuck it down as 27 as a yearly report is the best i could find. The caco2 is stated as 85 therefore i derived the Hc03 from that and i was probably wrong with my calculation of...

    Water and brewing

Thanks for the help silver i have been messing around with brud water and the iron value of 12 has been causing me problems! I checked the water report again and the iron content and it was measured at ug/l rather then mm/l Im only new to this myself but i will read over your comments a few...

    Water and brewing

Ive been working on this water report and turns out a lot of information is on the website but i could not get anything on the minerals; calcium, magnesium and pottasium. I also used a converter which im not sure is correct but i multiplied the caco3 (85) by 0.6 which should result im my...

    Water and brewing

I will it makes more sense then paying 100 for a sample that may change or not be accurate! I can pick up a RO system for 150! On my next batch whats the oppinion on using spring water? That way i will have all the contents on the bottle and i can tweak it with the basics that mcKnuckle added...
