    I use this yeast for 99.9% of the beers I make at my Brewpub. It cut my fermentation time in half and does not produce off flavors at warmer temperatures.

    Back sweetening

    Making your beer sweet won't make it less bitter. It will only add another layer of flavor. If it were me I would brew the same beer again with a lot less hops and when it is ready to drink blend it with the beer that is too bitter.

    It's totally doable if you stay focused and work your ass off. A few things to keep in mind: You have to be ALL IN. No working a "real job" then after work go open your business. Don't expect to start out as big as you want to be. Start small and debt free and grow into a bigger business...

    When you push cocktails through a draft system you should use 100% nitrogen. You don't want your margarita carbonated. Yes it does separate. Places that have mixed drinks on tap have to go into the cold storage a few times a day and shake the keg up. Well, those places that care do.

    You want "beer blend" (75/25) gas not 100% nitrogen. I use to work a food gas delivery route. Ive nitrogenated every beer I drink at one point just to see what it was like. Waist of time. For me and my taste in beer nitrogenated beers are over rated.

    Can someone explain the lack of head retention in alot of modern craft?

    Being that it's photos you are looking at that means an entire commercially done photo shoot. No telling how long that glass of beer was sitting there. Too much sanitizer in the rinse. Soap residue on the glassware.
