    Captain Lawrence Freshchester Pale Ale

I think it looks good! I wouldn't dry hop with some cascade after 7 days of fermentation. I boil 1 pint of water and 3/4 cup of corn sugar for ten minutes to prime. I add that to my bottle bucket then siphon the beer in to the bottling bucket, carefully stir it in to avoid splashing which causes...

    Repitching onto Yeast Cake

So I want to know the pros and cons of using a yeast cake instead of washing and pitching yeast. My sanitation is excellent (in my mind) so Im not worried about that. I brewed a pale ale with simcoe and cascade whole hops. I plan on brewing a black ipa next to put right on the cake. I used...

    Coffee stout question

The brewing network interviewed DuClaw brewing in Maryland and for their coffee porter they put coffee grinds in the mash.

Well that recipe has 6 lbs Liquid malt extract i put at 60 minutes and the DME at 10 minutes. From talking to other brewers the DME can caramelize and be over boiled if boiled for the full 60 minutes. Malt extract is already boiled so when adding it's really only dissolving. THe OG should be the...

I would use 1oz Columbus for 60 minute and move the 30 min to 20 min and add a 0 minute hop addition. I would also try doing a 1L yeast starter. It's pretty simple and makes a huge difference. I've never steeped with 2-row before or seen it steeped on a extract recipe

    Hillcrest Pale Ale

I think the timing on my hop schedule is pretty standard. Steeping grains the same. I sampled my beer today when I added the dry hops and its a little darker than I'd like and not as bitter as I'd hoped. We'll see when its finished but use the recipe. That's why it's here! I'd recommend...

What's the worst craft brew (commercial) you've had?

Redhook variety pack was the worst set of beers i have had. It had an ipa, pilsner, copper, and pale ale. Each one tasted the same which was crap! I believe it was the store mishandling it, maybe exposing it to too much heat. I contacted redhook and they couldn't do anything

    Hillcrest Pale Ale

It's at 6 days of primary fermentation. I added 1 oz Simcoe whole hops for dry hopping. Gravity was at 1.016 but I've kept it really cool around 66F but now I'm going to let it get up to 69-70. I like to add my dry hops towards the end of fermentation rather than when it's stopped. A pro brewer...

    Recipe Etiquette

It depends on the brewer. The super competitive competition brewers i know will be polite and give the basics about their recipes but wont give their secrets. The average hobby home brewer will give you a minute by minute brew day brew schedule

    What is Extract Funk?

I'm and extract brewer and I've never had an issue with a "twang" or off flavor. I do a full wort boil and I've always done a combination of LME and DME in my brews. My LHBS sells LME in 6lb containers and most recipes call for more than that so I adjust to use DME for the rest. Usually it comes...

Help me brew better extract beers!

I still extract brew and had bad luck with kit beers. They all came out ok but the quality doesn't seem to be there. As soon as I started putting together my own recipes the quality skyrocketed

Blonde Ale Simple Blonde Ale (Extract)

So I bottled this beer today. Here are my final numbers: OG 1.052 FG 1.011 ABV 5.5 I did a 1L starter of WLp060 American Ale. It was done fermenting in 7 days but I brought the temp down to 62 for two days until I bottled it. I was worried about the color but it's pretty spot on. Its has...

Sometimes, you gotta' support the LHBS

I support my LHBS but I get frustrated at his hop selection. I know simcoe and amarillo are hard to come by and expensive but he wont buy anything unless it meets his profit margin. I know he has a business to run but I would go more often if he at least sold his hops at cost. Its not just hops...

    Bottles

Try steakhouses. I work at a casino and our steakhouse serves a lot if what we call 1/2 bottles of wine which are 375mL. We sell more 375s than 750s
