    You could be talking about Kells, Fado, or The Owl and Thistle. Kells plays a lot of soccer on their TV's. They are also supposedly the official bar of the Sounders in Seattle, and the Timbers in Portland so that bar will probably have a crazy cover, and a ton of people tomorrow.

    There is a HUGE rivalry game tomorrow night at 8 PM between the Seattle Sounders and Portland Timbers MLS soccer teams in Seattle. If you are anywhere near the stadiums the bars will be packed with people so keep that in mind if you go to Elysian Fields, Pyramid, or I'd say even Pike Brewing...

    Commercial IPAs

    Good call about distribution. When I was thinking about what commercial IPAs I like, I was trying to think about brands that might be big enough to be known outside of the West Coast region. Its tough, makes me want to travel more, and drink more beer!!!:mug:

    Harvesting Chimay yeast

    1. Thats what I'd do. just like washing yeast. 2. I would bring to room temp and make a new starter prior to pitching this into a batch to re-start. 3. no clue how you would tell cell counts. I'd think you would just compare it to others like you said.

    Newbie question

    I just drop them in. I do this for both pellet, or whole leaf. Pellets will settle out eventually with the trub on the bottom. Leaf will usually float the whole time and soak up some of the beer. Some use the hop sacks, some don't. Its all personal preference.

    Your recipe says to dry hop for 7 days. So, dry hop for 7 days in secondary, then bottle. Cascades work great for dry hopping.

    Commercial IPAs

    I enjoy Bridgeport's Hop Czar Imperial IPA. If you are looking for a normal IPA, Deschutes Inversion IPA is usually nice as well. Both are pacific northwest beers though so I'm not sure if they are distributed in the south.

    Basic Starter Question

    Yep, I use sanitized foil on mine. Wrap it over the top and let it go. The only time I put a stopper and airlock on one was when I ended up not using it (brew day was canceled) so I stoppered it and stuck it in the fridge until I was ready.

    I'd think this weekend would be a good chance to meet some clubs. A lot of them should have something planned for tomorrow's Big Brew Day. I just hit up The Cellar Homebrew shop on Greenwood during my lunch break. I'm all set for tomorrow's brew day!

    tasting beer before adding yeast

    You'll be fine, fresh wort wont taste like finished beer. It'll taste different depending on the ingredients you used. You probably tasted something that was really sweet, perhaps bitter, and grainy? Everything will join the party with your yeast in the primary and good beer will come out.:mug:

    I think you want 1.25 QUARTS / lb. 13lbs of grain X 1.25 qt / lbs = 16.25 qt / 4 qt per gallon= 4.06 gallons for mash. Figure about 1 gallon lost to grain absorption for every 10lbs of grain, and you should get about 2.75 gallons in your first runnings. I batch sparge and would figure the sparge...

    Shawnbou, I don't submerge mine in water so I don't know the effectiveness of the tape in water. I have been thinking about using the water bath method to keep temps down this summer if it gets hot, but I usually just used a wet t-shirt.
