    First stout, worried about over-pitching!

    I brewed my first stout yesterday and ended-up with an OG of 1.080. I re-hydrated two 11.5g packages of SF-04, aerated with oxygen tank for 60 seconds, and pitched. I had vigorous airlock bubbles in 3 hours. Now I'm worried if I over pitched, and if so, what impact that could have?

    Aeration System Introducing lead and Lead Compounds into wort

    P65 reminds me of a construction site that I live next to. It's constant, beep, beep, beep all day long from trucks and equipment backing-up. I've often wondered if the folks working there pay any attention to it at all since they must just tune it out after a while. Same for P65, I would bet.

    Question about "mash-out"

    I use I use an Anvil Foundry which calls for a 1 gallon sparge. I heat the sparge water to 170 degrees. So, you would say to dial-up the Foundry temp to 170 at about 45 minutes in the mash? Or, just forget about mash-out altogether?

    If a recipe calls for a 10 minute mash-out at 170 degrees and it takes 20 minutes to get from 152 to 170, do you then start the 10 minute mash-out countdown once it reaches 170? Maybe I'm wrong, but isn't 30 minutes before sparging too long?

    I believe you but, curious why many folks, including even those who have written books, say to put the immersion chiller into the wort during the last 10 minutes of the boil if .01 seconds will do it?
