    Water adjustments and hop flavor

    I brew very similar to you. About 80% grain, 20% extract. I use 2.5 gallons spring water and the rest (sparge, top-off) is RO water. I also add about 1-2tsp of gypsum in the last 10 minutes of my boil. I have been happy with the hop presence. Do you do an extended hop stand or dry hop?

    Comet Hops

    I've only used Comet for flame out and dry hop, no more than 1oz. They are very pungent, not sure I would do an IPA with all Comet, but I'd probably do a APA for sure to see what it's like.

    Will do for sure. This is my fourth batch of it, and hopefully best! I'll post the recipe & results in a couple weeks. It's a bit tricky to nail down as I'm going mostly from memory about how it tastes hop wise. We don't get Ft. George beers where I live. The brewery shared the grain ratios...

    Interesting ways to include oats in beer?

    I'm working on a clone of this: http://www.fortgeorgebrewery.com/beers/regulars/sunrise-oatmeal-pale-ale/ It's an amazingly delicious brew! The recipe I just did has 20% flaked oats. Currently dry hopping.

    Quick update on this. Finished out at 1.008 A little over 3 weeks in the bottle. This is a very grapefruit heavy IPA. I don't think that's a result of the Azacca alone but it is one of the flavor descriptors. I'm sure the late Apollo/Comet is emphasizing that a lot. I have a "control" batch...

    Nice thanks for the info. I think my hop ratios are off for sure. I think I'll do more of a 2:1 ratio of Citra/Mosaic/Chinook on the next batch. Looking at the recipe now I was at 4:1 :-o Regardless it made a pretty nice IPA just not exactly the 3 Way.

    Armadillo hops from Yakima valley

    I emailed YVH about the non re sealable bags. They said they can't find good bags that are resealable for the whole leaf 1Lb size. So as of now, the 1Lb whole leaf and 2oz pellet bags do not come in resealable bags from my experience. Sent from my iPhone using Home Brew

    Headspace question

    I ran into a similar issue when I transferred a mead to a glass carboy. My LHBS sells wine saver in an air can. I sprayed some in there to remove the excess oxygen. Hope it does the trick! Sent from my iPhone using Home Brew
