    I thought had read somewhere when I first joined this site about racking from under krauzen, but I couldn't remember what it said. But I knew it would make beer and that's all that matters! Tomorrow will be 1 week in bottles, will test one in two more weeks! Thanks for the replies!

    Air lock slows quickly

    I am by no means an expert yet, I'm still relatively new, but your beer should be just fine. No airlock activity doesn't necessarily mean its done fermenting. Let it go for two weeks and take hydrometer readings. When those hydrometer readings are stable, then it's done. RDWHAHB!

    Is it necessary to control the temp in a secondary? I brewed a honey weizen from extract and kept it about 65F throughout primary fermentation for two weeks. Just wondering if I could let it be in the secondary at 70F-75F for two weeks?

    Who fly sparges ? What's your technique ?

    While your fly sparging, do you continuously sparge until you have your pre boil volume even if you still have mash/water(i dont know if its considered wort at this point)in the mash tun or do you want to get all of the water in the mash tun out at your pre boil volume?

    Full volume boil for extract?

    The recipe calls for 1oz of Tettnang for 60min. Should I add the hops later in the boil so I don't get too much bitterness since I'm doing a full boil? The recipe also calls for 1lb honey. If I wanted to add more honey aroma, should I had another pound in a secondary? Thanks for all your replies!
