    i probably wouldn't have an aroma/finishing hop in a big ol' stout. i'd probably ditch the rice hulls too and add the 2 pounds somewhere else probably with the roasted barley. i like em dark and roasty. just my opinion.

    Get a northern brewer or midwest kit. Thats how I started. I wouldn't suggest a lager for the first time around.

    i like how thorough your plan is but dont expect full starch conversion. i dont think anyone hits 100% efficiency. i would expect about 70% for your first batch, maybe even lower.

    The plan is to section it sideways into 9 separate vessels. seems more space efficient than carboys. and i was thinking a bead of silicone on each side.

    a wee heavy should be sitting for much longer than a week. i brewed one about three weeks ago and moved it to secondary about a week ago, but don't have any intention on bottling it til mid to late january.

    airlock activity and fermentation aren't the same. take a gravity reading and wait 2 more days to take another one. if its the same do what ya gotta do if not leave it.

    it'll work for sure. the only "krausen" you get out of apfelwein is some bubbles around the edges. don't do a 15 gallon batch of barleywine in it but apfelwein will be fine.

    if you do a rather long primary you don't have rack it to secondary. as to the blow off tube i don't think you'll have a problem but I've never used one, i just usually rig up a fancy flap style airlock and deal with the mess.

    Nottingham is a pretty versatile yeast. If you keep fermentation towards the low end of the temperature scale you won't catch a lot of esters. Good all around yeast.

    I just did a batch quite similar to this minus the intense hop schedule. Just a lot of bitter and some finishing. Its in primary right now but smells awesome.
