    A partial mash is not that complicated, or if he has grains for seeping that's even easier. Going all grain may be a bit complicated if you don't have the right equipment. Read, read, read. This forum is very helpful.

    OK, here's proof that the StarSan did not kill my yeast. This is a 1 L starter and there appears to be a huge amount of yeast that has settled at the bottom. My plan was to take this up to a 2 L starter, but unfortunately it fermented at about 72 deg. So I'll probably just dump the poor guys...

    That's a good thing to know. I guess I'll remember that for next time. Maybe what I should have done is used two packs of dry yeast, rehydrated them and be done. At this point, the starter is doing very well, so the yeast is obviously not dead, so I'll just crash it, decant it and use it as is.

    Reason for the starter is that it was a lager. I am under the impression that lagers require a lot of yeast to get started. To measure the pH, I simply poured off a little bit out to a separate container so I don't think that I could have infected it. Thanks. I guess I'll just see if it...

    Thanks for the advise. I think that I will skip the decoction. Please see my post on the yeast in the yeast/fermentation forum. I think that I may have killed it and may have to start over with the yeast starter. Not a good way to start! Oh well, live and learn!

    Try the following: OK Bicycle Shop, they have a decent beer selection. The Deck also has a decent beer selection. Callahan's beer selection is not as good, but it's a Mobile institution that should not be missed. Agree with the Oyster House on the gumbo, apart from home made it's one of the best.

    Thanks for the tip. I did get the tablets and basically used only one tab per bottle and now the carbonation is perfect. Well, at least good enough for me. The batch was salvaged! Thank goodness for Grolsh bottles. It would have been a pain without them.

    Thanks, that's the kind of advice I was looking for. One "been there done that" and one really good idea. I'm pretty sure that my LHBS has the tablets. That's gotta be the quickest way to fix it. This place is great!
