    @pshankstar I tried an ethiopian decaf from sweet maria's and it made a really decent espresso. I would think it would make a good cup of coffee too. It's not the one In stock now but that one looks good too.

    Gelatin is great at removing astringency.

    I have fined with gelatin at room temperatures many times with excellent results. When I have tried it on cold beer I have seen the gelatin gel almost instantly without a chance to perform.

    Anticipated shelf life of sweet red Muscadine

    I fermented my first batch of muscadine dry in 2009. It peaked at 5 years and was still good at 10 years. I have 1 bottle left I'm trying to save it to 15 years. I don't know if sweet would be the same or not.

    Nice looking wheel! It looks like it will be a great cheese in 3-4 months. Why use the thermophilic culture? I thought Jarlsberg used only mesophilic. Or is that the secret ingredient those Norwegians have been keeping from us?! Did you use Flora Danica for the mesophilic? I love that culture...
