    Here is a 9.92# brisket trimmed and seasoned, going on the Weber kettle at 7.2#. should be good for 8-10 hours at 225-250°. Using Kingsford charcoal briquettes and pecan wood on an 18" grill surface... Happy 4th of July e'erybody!

    Planning to do ten gallons of Marzen, hopefully with American character via some domestic yeast and hops, but analogous to the German varieties... Lager yeast and low alpha acid hops.

    What I did for beer today

    Just bottled the amber ale from three weeks ago, OG- 1.054 and FG 1.009 for 5.9% abv... Also weighed out the grain bill for ten gallons of Marzen for next week's brew day 🤩

    Favorite of experienced brewers.

    My favorites are pale ales and reds but my brother and I make a Westvleteren 12 clone that is simply amazing 😍 Made it 8-10 times and it's a home run every time!
