    Here is mine all shiny and new. I elected to mount it so I could use the handle if needed The extra hopper is a boiler draft hood I had laying around. I think I might add some sheetmetal at the screws in the bucket to reinforce it.

    Beer Crate + Bottle Dryer for less than $7

    I found almost the same crates at Wegmans (grocery Store) for 5.99 and they work great. All my cardboard boxes were falling apart. I can fit 30 bottles in a crate. Didn't even think to use them as a drying rack.

    Reduced closeness in a hefeweisen

    I just made a Heffe with WLP380 fermented at 62 and it came out really nice. Ferment a bit warmer for more banana.

    Bottle Conditioning Time for Wheat Beers

    You should be fine in 2 weeks. I just bottled a hefeweizen at 3.6 volumes and it came out great. I entered it in a competition with 10 days in the bottle and took it 2nd place. Probably would have done better if it was 14 days but I decided to enter it at the last minute.

    Use siphon for yeast washing?

    That's what I did seemed to work pretty well. Just washed my first yeast a few days ago. Thought about the siphon but didn't want to clean more stuff.

    The instructions for WLP380 says to pitch between 70-75 and hold until active fermentation starts. Then ferment between 66-70 so I don't think there is a problem dropping to your fermentation temperature.

    I dug up a Nugget rhizome that wasn't growing and it just starting show some small roots starting. I think it's just taking it's time to get started.
