    It's high but a stout may be able to cover any esters with the roasty grains. I wouldn't be too worried just give it some time.

    If it's diacetyl the yeast should clean it up with time. It may be from over pitching 2 pks for 1.050 seems like a lot.

    I use the spreadsheet below and it has been very accurate since I dialed it in. My absorption is set down to .05 but I squeeze the bag. Use as much water as you can then dunk the bag in whatever remaining water you need to hit your volume. BIAB Spreadsheet

    That's good to hear. I am going to 11 gallons so when I brew with my brother in-law we can split 5.5 gallons each. Think I am going to tr wilserbrewer method and max out my keggle just keep whatever water I need to make up on the side.

    What your quoting here has nothing to do with BIAB you don't vorlaugh and drain an MLT.

    No that's a myth. It's impossible for person to squeeze tannins out of the grain. If you have a smaller pot by squeezing the bag will let you get more out of your mash since your not losing as much to absorption.

    I don't understand where this drop in efficiency comes into play. Once I switched to BIAB my efficiency went way up. I am adjusting my recipes for 80% now.

    Looks good. 3 Floyds Zombie dust is all Citra and it is an excellent beer. I think there is a clone recipe here in the India Pale Ale section although I think 3 Floyds calls it a pale ale.

    I think if you want nutty I would change the pilsner to 2-row or even better Maris Otter. The best pale I have brewed so far is Yoopers House Pale Ale The grain bill is great and might work well with Citra.

    Go slow and use a little bit of oil. Heat is bad when drilling hard metals. I used one on my keggle and it worked great.

    :D I guess if there is a lot of stuff in suspension it could throw it off otherwise it shouldn't matter what the sample is in. I use a sanitized measuring cup to get a sample because I can't see the damn thing in the bucket. :p

    Wobbly keg for conversion

    The bottom skirt on my keg was dented and I straightened it out a bit with a 4' pipe wrench. If it's the bottom of the keg it may not be a problem because that sits over the burner anyway.
