    So a small head means flat beer? Not enough sugar during the bottling process? You are right... I made a batch of Muntons Canadian Ale -- I don't like it at all. :( not sure what to do with it... *chuckles* wish there were sample packs, that made less bottles.

    I'm making a stout... was told to make it 13L instead of 23L... so I did as instructed... but the store also indicated not to keep the 13L brew in primary for more then 4-5 days because of the air-- 13L instead of 23L of liquid... I'm busy at work, and won't have time to rack to secondary till...

    Revvy, I did my reading and I KNOW your right already -- I'm not arguing that you are wrong... I'm going to state this once more... I want to taste the change in my beer. I KNOW ALREADY... longer the beer is in the bottle the better the taste! I didn't taste my beer on bottling day.

    If you never opened a bottle early then how do you know what it tastes like ? That is why I want to try and experience it my self. Sounds like old fishing people who don't share fish lol. I have 48+ bottles of beer, I drink one here and there... I may only have 41 bottles left, but who cares...

    Wow Revvy -- take it easy... I simply only taking one beer... I have over 48 bottles of beer and brewing another batch already... this is a first experience for me... i simply want to taste the beer mature and differance from a few days to a week, and so on.. wow

    But how do I judge this low to moderate carbonation? Again what is my desired Carbonation level? The Beer Recipator Calculator is just confusing the heck out of me....
