Pasteurization methods to stabilize bottled fermented apple cider

Looking at this from a pressure stand point, wouldn't you want the pressure inside the pot to build up? These bottles have a risk of exploding due to higher internal pressures, if the anbiant pressure inside the pot is closer to the internal pressure of the bottle, isn't there lest risk of...

    Cider smells...

This actually brings up another question. If the nutrient is added and the fermentation stops soon after. Will they add any off flavors/smells? They don't smell very good themselves so I'm wondering if there really helping the cause.

    Cider smells...

Yeah I used the WLP720 yeast. Its funny how such a few degrees can be enough to effect the process.

    Cider smells...

Glad to hear it will go away. I did nutrients but no energizer. And would you recommend the lower temps even if it was outside the recommended temp for the yeast? Ideal temp is between 70°- 75° granted there was a spike to 80° but would such a short period of time be enough to cause that?

    Recipe suggestions

I'm thinking about brewing a couple batches in the next few weeks and i cant make up my mind on what i want to do. although i like the occasional hop crazy brew, im usually a fan of the more malty drinks and they tend to be the ones i buy. that being said, nearly every new beer i decide to try...

    WOW, did i mess up!

i never thought about the volume of black patent malt being an issue. i like imperial stouts for the most part. but i don't think i have ran into one as bitter. this is the first one i have made as well so maybe its just a combination of the malts and the hops or some other force i have to recon...

    WOW, did i mess up!

ok, so i got a recipe kit at a LHBS and set out to make an imperial stout. there were lots of hops(recipe and instructions below) in it and they came in multiple poorly marked bags. ok so im a noob, and in my head i thought that i wanted a more malty less hoppy beer. so i only added the first...
