    I have my own mill set to 0.037” and I’m hitting 75% mash efficiency calculated by beersmith and 70% brewhouse efficiency so I’d LOVE to get 90+% mash efficiency and 75-80% brewhouse.

    Getting ferm mini fridge to lagering temps with STC-1000

    Buy a freezer. A mini fridge won't get cold enough to be much below 30F. I know from experience. You're going to run the refrigerator 24/7 and it won't get any where NEAR zero degrees. Unless you're talking about getting to zero degrees Celsius.

    Large yeast starter for 2bbl brew

    Create a larger starter. 5 gallon starter batches should work well. My club did a brew where everyone brewed on their systems, fermented at home then filled the barrel and aged it. Came out great.

    What I do is add the total volume of water needed to mash to my kettle and modify that water to what I want. Add the first step, bring water to a boil, add second step, bring water to a boil etc.

    Off topic but where did you get those bottle lables? As for too much foaming when beergunning, I've found adjusting the CO2 volumes helps. Sometimes it needs to be more than they suggest. Sometimes less. Each system is different.
