    First let me say I don’t fully understand all of this. But looking at the chart my first thought was mash pH is lower than wort pH because wort pH includes sparge water which I’m guessing would raise the pH. Maybe the labels should be Mash pH and Pre-Boil pH.

    I brew a hoppy Belgian ale with M31. I think using your slurry will also work. Low temps and a healthy pitch should suppress esters. T-58 is a good year but does not atennuate well so you have to keep that in mind.

    Brett Saison for Aging

    I think your best bet is 34C Experimental Beer. Oreo Cookies are not a spice herb or vegetable in my opinion. The other problem with putting it in SHV is the base beer is supposed to be a BJCP category beer. There is not a category for an Imperial Sweet Stout.

    Dry hopping a pilsner

    Cryo hops are not supposed to have any of the grassy/veg flavor aromas. You did not mention if you bottle or keg. Ive had good results keg hopping which would probably fall under the cold dry hop category. Search IPL (India pale lagers) recipes and see what they typically do for dry hopping.
