Question to my Cofee expert buddies

Last year I judged the category that included coffee beers. The brewers listed the ingredients and method and by far the dry beaned beers had the best coffee aroma and flavor compared to liquid coffee being added. I have brewed a blonde stout which had coffee. I dry beaned with 8oz. at 68...

The mystery of Galaxy hops and harshness

I can’t offer any proof but I have heard that Galaxy hops don’t agree with some people. Similar to how some people get cat piss from Citra hops. I have only brewed one beer with galaxy hops and the taste was terrible. I was at a brewers discussion and Trevor Rogers of De Garde brewing...

    BJCP

I have done it and would recommend doing it. Usually, people will form a study group and each session you will cover a brewing topic and then taste commercial beers from a BJCP category. Take BJCP 1. Standard American Beer as an example. You would sample styles in each of the four...

    Underletting for mash-in

So I have wanted to try underletting. I have a Fusion 15, 3v2p single tier system. So would I fill my HLT with my sparge water plus mash water. Heat the HLT to strike temperature and then pump from HLT to Mash Tun. With underletting do you still try to hit a mash water ratio. Or after...

adding maple syrup or honey post boil...procedure/method/how to? not "how much or when"

I back sweeten a cider I make for my wife. I keg the cider, add Simplicity Candi Syrup and use Potassium Sorbate to keep the yeast from fermenting the Candi Syrup. I then force carb the keg. I'm guessing you could do the same with a beer and honey or maple syrup. Doing some quick reading it...

Pasteurization: could tongs could lift a beer bottle out of hot water?

https://www.amazon.com/dp/B00FRQVKRY/?tag=skimlinks_replacement-20 Search for canning lifter or canning tongs. Canning tongs are designed for canning jars so I’m not 100% certain they close small enough around a 12 ounce bottle if that is what you are pasturizing. I would be concerned that...

    Capping magnum bottles

A cork can't hold pressure well. So if you cork flush you still have to cap which is what some Gueuze producers do. Belgian (mushroom) corks always need cages.

    Capping magnum bottles

I make sparkling wine and Brut beer using the methode champagnes. I cap 750ml champagne bottles carbed to 6 volumes without a problem. If you are using a wing capper you may have a hard time capping Magnum bottles if the neck is thick even with switching the plates. I would test that before...

Looking to Buy RO Water System...

RO systems can also be mounted under your kitchen sink. This gives you a sink mounted spigot to use for drinking, cooking, coffee. I had my system from when I had Saltwater Aquariums. My system has two presssure bladder tanks that holds about 4 gallons of water. I have a second length of...

ISO - Stout Recipe (with caviats)

    2 beers 1 hopped wort

Here are some of the one hopped wort beers I have done myself. Standard Hefeweizen Malt bill and hops. At flameout steep coriander and orange peel in 1 to 2 quarts or wort so you have a Hefe and Belgian wit. Munich Helles Malt bill. After mash pull 1 to 2 quarts and steep carafa malt. You...

    Beer in Dallas

If you are downtown then definitely check out Braindead and Deep Ellum Brewing. Braindead has great food too. Total Wine usually has a bigger selection compared to Spec’s.

    Beer in Dallas

What part of Dallas will you be in? That will help to make some suggestions for something close to you. Total Wine and Spec’s are the two main Beer/Liquor stores in the area that will have a wide selection of local and US beers. Whole Foods, Central Market and even Signature Kroger’s are...

    Mosaic S.M.A.S.H. (yellow rose clone)

I’ll add another data point. I basically brewed Derp’s recipe. I’ve tried earlier recipes in this post but I like how Derp’s hop schedule provides good bittering and plenty of hop aroma. The only place that I deviated was my choice of Yeast. I used K-97 dry yeast. Two reasons, K-97 does not...

Good Phenol Production during Bottle/Keg Conditioning

So I have a recipe for an Golden Rye ale. Last time I brewed it, I split the batch and fermented 2.5 gallons with M29 French Saison dry yeast. I put this beer in a Party Pig which requires adding bottling sugar to carbonate. This beer turned out fantastic. Great Table Saison with complexity...

    Barrel advice

When you fill the barrel with hot water be prepared for it to leak a little. This is common until the staves swell to seal the barrel. So be prepared to make a mess! If you have a spare bathroom, I would fill and leak test in a bathtub.

    BrewJacket Immersion Pro Temp Question

The other thing is that with fermentation going you will have yeast swirl which will help make the temperature more uniform. For your test with just water try shaking or swirling the fermenter some.

    BrewJacket Immersion Pro Temp Question

The thing I have noticed with the brew jacket is it takes a few hours for the temperature to equalize. I brewed a beer with my brew jacket and also had my Tilt hydrometer in the beer so I was measuring inside and outside temps. From my brew notes: 1pm put beer in fermenter. Tilt said 73°...
