Agreed, he has been great through my initial Q&A phase. Very fair and quick to respond.

    Prefab Brew Stands

I am in the same process and leaning towards Kurt at BrewSteel. I also have a bad back (had two discs removed and a fusion) so my main priority is a system that will be kind to my back. I have never used a top tier but ruled it out for two reasons. Didn't want a 3 tier or need a ladder to...

My First Catastrophe - Should I dump it?

Keep it going, it can't hurt anything and there is a decent chance it will turn out just fine.

so what's the worst part of brewing for you

Cleaning is the worst part for me. I don't mind the initial cleaning, sanitizing and prep because I am still excited for what is about to come but by the end of the brew day, I have had a few beers, am getting tired and unmotivated to clean all my gear. I try to clean most of it while I go but...

    Higher ABV

Depends on the recipe, the beer you are trying to brew and how much higher you want the alcohol to be. The basic answer is you need more fermentable sugars in your wort for the yeast to feed off of. That can come from actually adding sugar or adding more grain/malt.

Things to get for the first time

I agree with everyone else, most homebrew stores have good startup up kits. I got mine from my local store but NorthernBrewer.com has a good one as well if you are looking for options. Only thing I would add to the kit that most don't come with is a wort chiller.

Spice, Herb, or Vegetable Beer Honey & Chamomile Wheat: What a way to end a long day

This sounds delicious! This past weekend I brewed a Belgian Blonde with honey, chamomile and bitter orange peel. The wort tasted good and it's currently fermenting away. I may have to brew this wheat version and compare. I used the standard ground up tea you would find in a tea bag, will have...

    Chocolate beer

The last time I made a chocolate stout, I used my standard oatmeal stout recipe and just put a pack cocoa nibs (Ghana) from Northern Brewer in secondary for a week. Came out pretty awesome. I also did a version with cocoa nibs and chipotle peppers. That was even better but still need to tweak...

    Weldless brew stand.

Looks awesome! I have been going back and forth on what I want in a brew stand for awhile now and finally decided I am building one of these in the Spring.

    Drinking my 1st homemade beer

Congrats! I love to hear when new brewers try their first batch of homebrew and love it. That's what sucks you into this hobby! If this first homebrew is the 3rd best IPA you have ever had, I would say, stick with it and tweak it. See if you can make it #1 or 2 on your list!

should there be this sludge at the bottom?

It does seem like more than usual but it's most likely fine. I don't think you have anything to worry about.
