Beer tastes good BEFORE bottling, bad after..???

Don't see the need for letting the bottles dry after a Star San soak. It should do nothing but provide more of an oppurtunity for microbes to land in the bottle.

What do you write on your bottle caps?

They are Avery 5408 3/4 round. There are 24 labels per sheet and 42 sheets in a package for $7 at staples. Works great and takes 5 minutes to write label and print!

I use Avery labels and print them out. Beer name, ABV and date bottled. I like the idea of batch number!

Did I rack to secondary too soon?

I actually just did this same thing on Sunday. I normally don't do secondaries, but people say if you dry hop, use a secondary. This was my first time dry-hopping. My gravity was 1.025 when I transferred. I'm not too worried because I got the yeast rings around the glass carboy several hours...

A chemical that resembles the smell of bananas. Esters are usually apparent in very warm fermented beers.

    Rye Ale Problem

Sorry, I haven't read about that. I just know you aren't supposed to in a partial mash, not sure why it's different in a BIAB.

    Rye Ale Problem

you shouldn't squeeze you grains as it releases bitter tannins. a sparge of 170 would have been more effective at extracting the sugars tied up in your grains.

    Question on AHS kits

Nice to see a fellow northern new yorker. I've done three partial mashes from ahs. their instructions are to steep (mash) the grain in 2 and a half gallons of water (pretty sure). You can then add the extract and boil. Top off later. I really liked their irish red ale. Yes, get the nylon...
