    You can use Pale malt in place of 2-row for the most part. Pale is slightly darker at about 3 srm i believe. Its like the difference in golden promise and maris otter they are bother british pale 2-row malts but have slight flavor differences.

    Is a 48” stainless table wide enough for 3 sanke kettles?

    You can stagger them put 2 vessels towards the front of the table and the middle vessel pushed back. Valve positions would be your main concern. I have 2 15 gallon kettles and a 20 set up this way at work and with those I have to deal with handles so they are wider than keggles.

    I have seen a handful of complaints about the grainfather conical not working well for small batches in the grainfather users group on FB. I have a GF I use for small batches but not their conical so I'm just speaking from what I have read.

    I own a 3 vessel eherms setup and I love it. I also have a grainfather I got used that I enjoy, although it is underpowered. If I hadn’t started with 3 vessel I likely would have designed a ebiab setup. Mostly to save space. They both work well.

    Probably not whirfloc related. What do you clean your equipment with? Any dish soap? Glassware type and cleanliness also affect head retention. How is your carbonation level?
