    Black-Blackberry IPA

Worked out to 75% efficiency, right on the mark as mentioned w/ 5.4 gallons at 1.067. Fermenting nicely in a 6.5G bucket. Pretty much full-on within 24 hours, probably about 14 hours or so. Keeping temps at around 64-66. US-05 isn't picky with temps. Pitched 2 packets of US-05, dry. I've done...

    Fast Souring - Modern Methods

I just had another peach and blackberry sour. Man, are they great! There's some "funk" in there from the Lacto and they are insanely drinkable. Yesterday I liked the peach more (both being terrific), but today I actually loved downing the blackberry more. It's so hard to pick a favorite. You...

    Fast Souring - Modern Methods

Looks correct to me. If you wanted to get uber detailed, mine used Goodbelley Juice + Renew Life combo.

    Black-Blackberry IPA

We shall see. Nailed 1.067 OG exactly.

    Black-Blackberry IPA

Smells a little roasty. Maybe that’s normal. Kinda pissed. I’ll hope for a happy accident.

Winners! Perfect head. Perfect lacing. Perfect color.

    Black-Blackberry IPA

Sounds good. I will full mash them. The reason I ask is because it's the difference of needing to use lactic acid, or not. If I include the dark grains in place of the rest, I'll be right smack at 5.5 mash PH with no acid. Always nice when it works out like that. I BIAB, and I find 90 minutes...

    Black-Blackberry IPA

Last question: the Midnight Wheat and Carafa III. Should I grind and add these grains with everything else for the 90 minute mash, or should I add these grains during the last 10-20 minutes of the mash? I want to impart the least amount of roast possible. I wouldn't be upset if there was a...

    Black-Blackberry IPA

Yep, it's the right stuff then. Cool! I'll post some updates this weekend.

    Black-Blackberry IPA

Got the grains today. The grain container just said "Carafa III". It looked like wheat almost. Is this the non-roasty version/right one to use? I bought it anyways.

    Black-Blackberry IPA

That's pretty close to what I ended up with. Think I may brew it this weekend. So far I'm choosing to go slightly heavier on the biscuit/Munich and a little less wheat. I'd expect still plenty of good body from this grist though?: 67% Pale 2-Row 14% Munich 20L 5% Midnight Wheat 4%...

    Black-Blackberry IPA

Interesting about Midnight Wheat. I added 1LB of that. I heard Carafa III also doesn't have the roastyness either, is that true? Take a look at it now! https://brewgr.com/recipe/83344/blackberry-black-ipa-recipe?public=true Regarding Lactose, I'm always prefering to be on the safe side. I...

    Black-Blackberry IPA

I made a Raspberry IPA w/ Lactose before, and it was a huge hit. I figure this one would be similar, just want it dark in color. :)

    Black-Blackberry IPA

Ahhh...good idea. I forgot that adding a lactose addition could be good! How about .5LB of lactose! Blackberry Black IPA Milkshake! 1Oz of Warrior for 60 minutes 1Oz of El Dorado for 10 minutes 1Oz of Citra at FO 2Oz of Citra dryhop

    Black-Blackberry IPA

Yea...Black IPA w/ Blackberry. Why not? @RPh_Guy Here's a rough go-ahead. Point is to use bittering hops in my freezer. https://brewgr.com/recipe/83344/blackberry-black-ipa-recipe?public=true What would you change? Don't want porter/stout taste in it. Just want a dark color. I bet I'm...

    Fast Souring - Modern Methods

The lady always seems to leave out either ginger or garlic! I've never seen her use it, but I bet it gets used!

    Fast Souring - Modern Methods

5.5 gallons of blackberry bottled. Flavor notes: Very sour as well, perhaps slightly a little less on the nose, but still definitely sour! Blackberry notes are strongly present on the nose and very complimentary. Beautiful deep red/maroon color. Body is still on the medium side. Lovely complex...

    Fast Souring - Modern Methods

Bottled 5.5 gallons of the peach sour today! Flavor notes: Very sour with complex notes. Peach character is present, but not heavily forward. Beautiful pale peach-like color. Body is medium, which is going to make it quite enjoyable. I cannot explain the complex notes, but I am very impressed...

    Fast Souring - Modern Methods

Turns out I only had .5 ounces of Cascade, so I just used that for the peach. I did the Moteuka and Ace combo for the Blackberry!

    Fast Souring - Modern Methods

There's actually quite a lot of fruit in each one. We did 5lbs of blackberries (1lb/gal), and 10 lbs of peach (2lb/gal). Moteuka/Ace for Blackberry...go for .5 ounce of each? 1 ounce Cascade for Peach?
