    Another data point for Ekuanot in a pilsner! It certainly does have a pepper note but it works very well. My wife reckons its kind of like the way rocket/arugula is peppery which lines up perfectly with what you said you don't like!

    Any thoughts on the what the water profile contributed? I've been tempted to do something similar to the Verdant profile posted a while back where the sulfate was base numbers and the chloride somewhere in the 200s from memory. That hop combo sounds amazing.

    I would keep your cryo for the dry hop. Be mindful of your calculated efficiencies with all the malted oats too.

    Any thoughts on how a potential lactose additon would play with that grain bill? A local brewery here in Melbourne that does excellent Oatcream IPAs told me they use 4% lactose in an 8% beer.

    Cant speak highly enough of Dermott & Beerco, they are my go to for hops - especially the NZ & US stuff.
