    I wouldn't mess with it. Post boil wort always tastes way more bitter than it will taste post fermentation. Something magical happens during the ferment to that bitterness, although I don't personally know what. It is fun tasting the wort, but tweaking at this point is a bad idea IMHO.

    You have to let it condtion in the keg at serving temps for two or three weeks to allow the chill haze to drop out. The same goes for bottles. Personally I don't mind the haze. Of course I still bottle and letting a bunch of bottles sit in the fridge for weeks isn't really an option for me...

    That sounds like a really fun contest, plus it sounds a lot easier to judge as its easier to taste what's different between two samples rather than judging something on its own merits. It would be even neater if the judges didn't know which was the commercial and which was the homebrewed...
