    Pectic enzyme necessary w/o heat pasteurization?

    I am starting a cider ferment with UV treated juice and adding sulfites. I won't be heat pasteurizing. I seem to remember that heat treating is what later causes pectin haze. Is this correct? Do you always use pectic enzyme? Thanks!

    This one looks a bit different than pictures in similar threads. Little white circles on top of the brew just after racking to secondary. Krausen in primary was quite active. Thanks!
