    I leave my Amber ales sit for about 5 to 6 weeks in primary before I do anything with them. It usually takes a few months after kegging to get to that crystal clear stage but the less sediment that goes into the bottle the less sediment you will have floating around in there.

    I leave my beer in my plastic primary for 4 to 6 weeks routinely and never have any trouble with my beer. Revvy spelled it out very succinctly above and I concur 100%.

    Maybe collecting a little more wort would help you. For a 5 gallon batch, I start with 8.5 gallons of wort and finish at about 5.5. That way I don't wind up with LME when I'm done.:mug:

    You definitely need a blow off hose when reusing the yeast cake. You don't even need to aerate, just siphon on top and hold on for the ride...it's fast.

    There's your problem, potassium sorbate and sodium benzoate are yeast killers. You need some juice without preservative to make this work. Looks like you have some might sweet cider to dispose of. Maybe heat it up, add cinnamon and throw a party?

    Fastest fermentation!

    Not to worry, everything is normal. When you reuse the yeast cake like that, fermentation begins quite immediately and finishes fast. I've had several 24 hour fermentations when I reuse the yeast cake. Just let it sit and clean up and you will have a great beer.

    I have a 15 gallon pot and it works perfectly for 5 or 10 gallon batches. It's aluminum so it's not so heavy to move around. I can't lift it when it's full but then, I don't need to.

    Do you cover your carboy?

    I do all of my fermenting with my carboy or bucket inside of a 30 gallon trash can. I really don't have to worry about light hitting my brew that way. Also, when the stopper gets blown out by a particularly fast fermentation, the mess is contained within the container.
