    I just bottled some dark cider today that I made using one pound of dark brown sugar per gallon of juice and made some mulled cider with cinnamon, clove, and anise with the two cups I had left over. I would definitely recommend making something similar. I would go with the EC-1118.

    Whirlpooling not working

    I went ahead and racked it all into the primary too since it was a little over a gallon. I figure it will settle out and compact by the time I rack it to my keg in a few weeks. It didn't seem to hurt the last batch.

    That sounds like the problem I am having. It looks like break material rather than hop bits. I'm also using a whirfloc tablet, so that might be contributing to it.

    Would you recommend using about a quarter of the washed yeast cake? Or would that still be way to much?

    They both use WLP007 dry English ale. The wheat is a clone from a local brewery and they use that yeast even for their wheat.
